Abstract: The published data on the redox reactions of carotenoids, their supramolecular inclusion complexes and the composition, properties and practical application of these complexes are generalised. Special attention is given to the effect of complexation on radical processes involving carotenoids and on the antioxidant activity of carotenoids.
